Believe it or not, there are many days where I just can’t hit my fat macros without having a snack designed specifically for that need. In order to hit fats, without adding much in carbs or protein, I started playing around with avocado ice cream. I saw few of these posted on Pinterest in the past, but never gave them much thought. Once I started tracking macros and seeing the need for higher fat content in my diet, I decided to play around with freezing avocado into an ice cream. On my first try, I mistakenly thought I needed banana to help with the flavor and texture. Below is my initial recipe, that is delicious, but also takes up some carbs.

Ingredients:
1 Avocado (207g)
1 Banana (102g)
3 Tbsp Cocoa Powder, Unsweetened
3 Tbsp Truvia*
1/2 tsp Vanilla Extract
Pinch of salt
15g Ghirardelli 60% Cacao Chips, broken in pieces
Directions:
Combine all ingredients in a food processor except Cacao chips,
stir as needed, until well blended.
Stir in Cacao Chips by hand
Freeze for a few hours. Enjoy!
May need to defrost a bit before scooping
*Can substitute honey or another sweetener
